I don’t have a good name for this, so the name of the mushrooms will have to do. After dating a couple vegetarians, I’ve been trying to come up with some filling appetizers and mains with vegetables as the star, cooked almost like a steak.
Hen of the Woods
Ingredients
- Maitake/Hen of the Woods Mushrooms
- Wasabi-mayo
- Soy-butter sauce
- Green onion very thin slices on angle. Soak in ice water for 10 minutes, then dry.
- 3 T soy sauce
- 1/2 T oyster
- Half a stick of butter
Instructions
- Add soy and oyster sauce to pot, then heat. Let the butter melt and thicken.
- Quarter maitake. Cook on high in ghee or fat. Add a T or two of soy-butter sauce halfway through.
- Plate as wasabi-mayo, green onions, mistake, sauce, sesame seeds
