Pasta Aglio e Olio

I adapted this recipe from The Chef Show. Its a simple six ingredient pasta that is easy to make, but somewhat difficult to make extremely well.

Pasta Aglio e Olio

(Pasta with Garlic and Oil)

  • Large skillet or saucepan
  • Large pot


  • Package of spaghetti or fettuccine
  • 10-12 cloves of garlic cut as thin as possible
  • 1 bunch of parsley finely chopped
  • 1 T of dried red chili flakes
  • 2 T butter
  • 1/4 cup olive oil
  • Parmesan optional


  • Boil pasta, cooking until al dente. Reserve a cup or so of pasta water before draining.
  • Heat oil in large skillet over medium heat.
  • Add garlic. Adjust heat if garlic browns too quickly.
  • Add chili flakes. Then parsley.
  • Stir quickly and add pasta.
  • Mix and add butter.
  • If the pasta has absorbed most or all of the oil, add a small amount of pasta water.
