One-Pan Chicken and Potatoes with Tzatziki

Inspired by a random Instagram reel. Depending on the size of the chicken I’m using, I’ll par-cook the potatoes by boiling them for 10 minutes or so before I put them in the baking dish.

Ingredients

  • 2 chicken thighs or leg quarters bone-in, skin on
  • 2 large gold or red potatoes
  • Olive oil
  • Salt
  • Dried thyme
  • Cumin
  • Garam masala
  • Chili flakes
  • Zaatar if you have it
  • Tzatziki
  • 1/2 cucumber grated and liquid squeezed out
  • Greek yogurt
  • 1 garlic clove grated
  • Salt
  • Pepper
  • Lemon juice
  • Lemon zest
  • Fresh dill
  • Fresh mint

Instructions

  • Peel and cut potatoes into 3/4-1 inch cubes.
  • Add everything to large bowl or directly into baking dish. Mix until everything is combined and chicken and potatoes are covered.
  • Cook at 385 for 35 minutes or so.
  • Tzatziki
  • Add grated cucumber in a bowl with a couple of spoonfuls of greek yoghurt, a grated garlic clove, salt, pepper, lemon zest, lemon juice and finely chopped dill.
  • Mix well and season to taste.
