Inspired by a random Instagram reel. Depending on the size of the chicken I’m using, I’ll par-cook the potatoes by boiling them for 10 minutes or so before I put them in the baking dish.
Ingredients
- 2 chicken thighs or leg quarters bone-in, skin on
- 2 large gold or red potatoes
- Olive oil
- Salt
- Dried thyme
- Cumin
- Garam masala
- Chili flakes
- Zaatar if you have it
- Tzatziki
- 1/2 cucumber grated and liquid squeezed out
- Greek yogurt
- 1 garlic clove grated
- Salt
- Pepper
- Lemon juice
- Lemon zest
- Fresh dill
- Fresh mint
Instructions
- Peel and cut potatoes into 3/4-1 inch cubes.
- Add everything to large bowl or directly into baking dish. Mix until everything is combined and chicken and potatoes are covered.
- Cook at 385 for 35 minutes or so.
- Tzatziki
- Add grated cucumber in a bowl with a couple of spoonfuls of greek yoghurt, a grated garlic clove, salt, pepper, lemon zest, lemon juice and finely chopped dill.
- Mix well and season to taste.
