Lemon Chicken

This is one of the first dishes my dad made my mom – definitely a good date meal. It’s also easily adaptable and the basis of Chicken Piccata (with capers and white wine)

David’s Lemon Chicken

  • 2 boneless skinless chicken breasts, pounded to 1/4 in thick
  • Flour for dredging
  • Salt and pepper
  • 1/2 c chicken stock
  • 2 cloves garlic
  • Butter or oil
  • Artichoke hearts drained
  • 2 bay leaves
  • Juice of 1/2-1 whole lemon


  • Lightly flour chicken.
  • Cook over moderate heat in a sauté pan until just cooked through, flipping once.
  • In same pan, cook garlic to release flavor. Add bay leaves and sauté briefly. Add salt and pepper and chicken stock. Bring to simmer
  • Add chicken and cook for 1 min.
  • Remove chicken to plates. Add artichokes to pan and cook, shaking pan, for 30 sec – 1 min or until sauce begins to glaze. Pour over chicken.
