Korean Fried Chicken Sandwich

I was trying to figure out a way to make crispy fried chicken without needing a big pot of oil and this was the result. The rice flour and corn starch are essential here to get the crunchy outside. This is the simplified version of this recipe – if you want something a little extra you can add an Asian coleslaw, too.
