This was sort of the saving grace of a bunch of produce that was going bad. It turned out to be one of the better things I’ve made in the last couple months. It’s a lot of knife-work getting all the veggies cut up to the proper sizes, but a generally easy and quick meal that saves and reheats well. I used the same pie crust I always do, just cutting everything in half.
