Banh Mi

Bahn Mis are already pretty simple, but this is a version that myself and a friend, Kelsey, made that is more suitable to a home kitchen and ingredients. It is admittedly, kind of a lot of ingredients, but at a local asian market, the raw ingredients, not including the sauces, should cost you less than $20 total.

Ingredients
  

  • 1/2 pound Ground pork or thinly sliced pork loin
  • Fresh mint
  • Fresh cilantro
  • Lime juice
  • 4 Sandwich/French loafs

Pork Marinade

  • 1 T brown sugar
  • 3 T soy sauce
  • 3 T fish sauce
  • 2 T sliced ginger
  • 2 T smashed sliced garlic
  • Black pepper
  • 1 Shallot or 1/4 yellow onion minced
  • Lime juice

Pickled Veggies

  • Carrot peeled, julienne
  • Daikon julienne
  • Cucumber julienne
  • Ginger julienne
  • Jalepeno/serrano sliced
  • 1/3 c rice vinegar
  • 2 T salt
  • 1 T sugar

Instructions
 

Pork Marinade

  • Mix all marinade ingredients in medium bowl. Stir to combine. Add pork and mix to cover, using your hands.
  • Cover with plastic wrap and put in refrigerator for half an hour or so.

Pickled Veggies

  • Cut all vegetables for pickled vegetables. In large bowl or plastic container, add vinegar, salt, and sugar, stir to dissolve. Add vegetables.
  • Cover with plastic wrap or top and put in refrigerator for half an hour or so.

Sandwiches:

  • Heat large cast iron or other skillet over high heat.
  • Add pork, two or three slices at a time, not overlapping. Cook for roughly 20-30 seconds per side.
  • Butter both top and inside of bread, then toast until golden brown.
  • Assemble: first with mayo, then pork, pickled veg, cilantro, mint, jalapeƱos, and a little fresh lime juice.
