I don’t bake a ton, and wanting to challenge myself, I decided to make this without a recipe or looking at any proportions, just going off feel. It turned out good the first time, but better after a second and third attempt with some tweaks. Feel free to adjust the amount of sugar, cinnamon, or bananas, include nuts, chocolate, or any other likeminded additions. One thing I did like after more trials, is not mashing the bananas too much – I liked the larger chucks of banana, giving it a stronger banana flavor and better texture.
Cinnamon Banana Bread
Ingredients
- 1 1/2 c flour
- 1/3 c sugar
- 1 t baking soda
- 1/8 t baking powder
- 1/2 c vegetable oil
- 1/3 c warm water
- Large pinch of salt
- 2 eggs
- 3-5 T cinnamon
- 3-5 mashed bananas
Crumble
- 2 T brown sugar
- 4 T cinnamon
- 4 T butter melted
Instructions
- Preheat oven to 400˚.
- Combine all ingredients for dough in large bowl. Pour into a buttered cake or bread pan.
- In same bowl, combine ingredients for crumble, then spread over top of dough.
- Cook for roughly 20 minutes, or until a fork comes out close to clean. Reduce heat if necessary.
